I’ve been in the culinary industry 37+ years and a lot of famous chefs have come and gone, a lot have been very disparaged by regular chefs in the industry.
But here’s the thing: those famous chefs promote your industry, which in turn offers you more opportunities. They should be embraced, and not shit on.
Anyone who shows an interest, even if it’s only ‘fashionable’ because MS fucked up again, should be given the benefit of the doubt and assisted (if that’s your thing) or encouraged to break away from the kings of enshitification.

37 years in the industry, I knew when I was a young cook I wouldn’t make jack shit for pay, so I always looked at places where I could enjoy life: N. Florida, Buenos Aires, Bermuda, Bonaire, Seattle, Los Angeles (ok, that was for straight up pay…never again!) now Spain. Hard work, a good partner, and dumb luck.
Sold our house at the right time (Trump presidency #1), funded a year & a half in the EU with ‘no income’ (you need to show income plus have enough funds to show independence -and family send letters of assurance & their bank statements for support, plus private insurance, etc. & patience.
Found an amazing town in 3.months and have been here for 7 years, restaurant opened 4 months before COVID lockdown, the landlord was amazing throughout the whole ordeal, didn’t charge the 3 months closure, we paid half rent for the 1st year and were able to repay it within a year). Neighbors were amazing (again) very supportive through the whole deal.
This is when we found out we can do it just by ourselves…the kids then some casual employees PT during the high season. This year we had 2 neighbors kids work with us for their first ‘real job’.
Great community, we work very hard but have some awesome quality of life (Mediterranean is 500m away) and more than anything got lucky.
I wish others the same!

oh absolutely, had to leave the US to live the American Dream, and can’t say it was a bad decision!
Yeah detaching your cheffiness in your personal life is a job in itself, I had OJT all throughout my children’s lives until they moved out, THEN my wife and I opened a BBQ joint and it’s just her and I and HOOOOO BOY the shoe is on the other foot!!! lol…we have fun.

2·22 days agoWell there is a reason the top American addiction specialist companies (cigarette industry PM, etc.) bought up all the processed food companies…they had the method but needed to diversity the market because of the backlash & lawsuits for cigarettes.
Now who would sue a company for producing a daily necessity? At the end of the day all they’d be required to do is soap a label on it saying ‘part of a balanced diet’ or some such bullshit.
America is driven by addiction.

11·28 days agoThere won’t be a long term. The mid term would see enough people out of work or without resources for food/shelter etc that they will resort to alternative means of acquiring resources which will then give the administration the excuse it needs to enact martial law
…and that will be that

52·28 days agoAbsolutely. Got it for Xmas one year, played until there was a god awful fuck scene that was…really something, and unexpected. Like, ok, I get that there are people that this is their only sexual outlet but can you fucking warn a guy?
It really reminded me of an updated Perfect Dark (360 version), which was…just stupid.
Late 80s early 90s I got into the database for our menus & recipes and changed ‘hot dog’ to ‘tibe steak smothered in underwear’ and then promptly forgot about it until one day months later with the storeroom clerk he was printing the monthly menus and inventory, lol and behold I laughed my ass off. He never even noticed because we just printed and filed the paperwork.
I also point around in areas that were ‘resteicted’ I found the ‘star wars’ game, and I would play it for hours on the midnight shift. Nothing like the old green screen games.
